Happy Easter!

I wanted to have a few non Easter Egg goodies to share with the family today so I thought I’d share what we will be having.

I totally cheated and bought these from a gluten free shop. I cannot eat fruit either so had to go the Chocolate version – what a shame. There were a few different types around this year which is great to see. These ones are Gluten Free Gourmet. I believe there was also ones from:

Pure Bred – I only heard about these, I could never find them in Coles near me.

Gluten Free Egg Shaped ‘Wagon Wheels’

Does everyone in Australia remember the yummy chocolately snack Wagon Wheel? I do too and of course they are a distant memory for me as they are totally full of wheat and gluten. Then I saw a post here at One Crafty Mumma about making easter egg shaped ones yourself for Easter using arrowroot biscuits.(cookies)

As you can get gluten free arrowroot biscuits thanks to Leda I totally used Melissa’s idea and made a gluten free version.

Wagon Wheels IngredientsIngredients:

  • one packet gluten free arrowroot biscuits – I used the ones from Leda, you can get them from Woolies and Coles
  • raspberry jam – I used Coles Raspberry Jam
  • marshmallows – I used Mr. Mallow – from Big W and some Woolies
  • chocolate to melt – I used Cadbury Melts
  • sprinkles

Method

  • spread each biscuit with raspberry jam
  • cut each marshmallow in half and place the 2 halves on one biscuit and do the same for half of the biscuits
  • microwave for 10 seconds approx. watch the marshmallows, they may melt quicker
  • place another biscuit on top and push down gently
  • spread with melted chocolate
  • sprinkle with sprinkles

Oh they are so so yummy and I can see these at birthday parties in the future

Gluten Free Easter Treat

Gluten Free Easter Egg Cookies

I wanted to make something yummy to put Easter Eggs in, something else I can eat as well as using up an abundance of Easter Eggs we all seem to accumulate at this time of year.

Cookies Ingredients

 

I used my Chocolate Chip Cookie recipe and just replaced the choc chips for cut up Cadbury Dream Solid Eggs. (they are the white ones)

Oh and since I didn’t have any self raising flour, I used gluten free plain flour with baking powder. Totally works the same way. I used about 1 teaspoon to 1 1/2 cups plain flour.

    I’m going to have to make the WAGON WHEELS for my daughter’s birthday later in the year. She will love these.
