Weekly Menu Plan with Gluten Free Ideas April 15th 2013

Menu Plan Monday

Welcome to another week. School is back for us this week, a relief really as we have been pretty busy this past week!

Inspiration for this week’s menu comes from browsing the internet looking for tasty dishes using the supplies up in the pantry and fridge. Haven’t had time for a proper shop so ‘shopping’ at home instead – it’s a great way to use up things you might have forgotten about. Also remember many recipes can be adjusted to suit what you have or to make gluten free, I’ll share my adjustments besides each dish name.

Weekly Menu Plan

MondayRicotta Ham and Tomato Lasagne – I’ll use gluten free lasagne sheets and leave the ham out and use mushrooms instead.

Tuesday – Cheese Crusted Salmon Pea and Potato Bake – oh my this looks good, I have frozen peas and corn mixed so I’ll use that and make sure the pasta sauce is gluten free to have a gluten free dish.

Wednesday – Oven Baked Sausage and Tomato Risotto – as I have heaps of tomatoes left over from making chutney last week, I’ll use fresh tomatoes instead of tinned and use a little more vegie stock. (make sure it’s gluten free) The sausages I will serve separately for the boys.

Thursday – Tuna Burritos – I haven’t tried making Burritos with tuna yet, this should be good! Using fresh tomatoes again instead of tinned and will use gluten free tortillas for me.

Friday – Simple Roast Pumpkin Soup – love roasting pumpkin for soup (and many other dishes) just tastes so good. Use gluten free vegie stock to make gluten free. Serve with heaps of toast

Saturday – Polenta Pizza – which is a carry over from last week.
