Gluten Free Salmon or Tuna Rice Based Quiche and Weekly Menu Plan

My folks come to visit last week and my mum made this for us. It was so so yummy, I knew I had to share with you all. The best thing is that you can use either tuna or salmon. My mum got the recipe from my Aunty but we don’t know where she got it from.

Gluten Free Salmon or Tuna Rice Based Quiche

Ingredients

Base

  • 1 cup cooked rice
  • 1 egg, beaten
  • salt and pepper

Filling

  • 440gm can salmon or similar size can tuna
  • 1 tbsp margarine
  • 1 onion, diced
  • 1 tbsp curry powder
  • 1 tbsp corn powder
  • 1 cup milk
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • 1 egg, beaten
  • 1 tbsp chopped parsley
  • salt and pepper
  • 70gms grated cheese
  • paprika

Method

Base

  • Lightly oil a quiche dish
  • Mix egg, rice, salt and pepper and spread into dish

Filling

  • Drain the salmon or tuna and place over the rice
  • Melt margarine and cook onion and curry for 1 minute
  • Remove from heat
  • Add cornflour and milk, stir until sauce thickens.
  • Add mayonnaise and lemon juice and stir over gentle heat until smooth
  • Add egg, parsely and salt and pepper and mix thoroughly
  • Spread this mixture over salmon or tuna
  • Top with cheese and paprika
  • Bake in moderate oven for 35-40 minutes

Weekly Menu Plan

MondayVeggie Mac and Cheese Casserole – I leave the bacon out and use gluten free pasta, flour and stock

Tuesday – Gluten Free Salmon Rice Based Quiche

Wednesday – Chicken Schnitzel for the boys (just normal) with sweet potato fries and veg.

Thursday -Beef Burgers with Corn – Potato Cakes and veg

Friday -Vegie Burritos  – I use gluten free corn tortillas

Saturday – Creamy Tuna Curry with parsley rice

Sunday – Simple Supper

    Oh yummo, you just reminded me how nice this dish is. It’s a family fave here and i haven’t made it in ages, mainly because i don’t like using the oven over summer. Anyways, thanks for sharing and meal plan mondays looks like a great idea. will have to check that out too.

    Looking good there, Nellbe! 🙂 You know when I was in Macau, there were dishes there that looked like yours. Except they use bacalao – or salted dried codfish. Yummy! 🙂 Cheers, Colin
